By late September, the building at 39 Unquowa Road was a pile of bricks. It had been home to the Catch a Healthy Habit smoothie café, and that rubble was the first visible sign of a downtown block coming down. The café had been a downtown fixture for twenty years. Less than a mile away on the Post Road, a bakery that got its start in Westport was opening its doors.
These two events set the pattern for Fairfield this fall. Most of the food businesses that arrived in town since August had already built a following in another town, and they came here to grow. The long-running local spots that changed this season did not close. They moved, and some took new names along the way. If your mental map of where to grab a coffee, a burger or a Friday dinner was drawn before August, it needs updating in both directions.
The Unquowa Road block packed up and stayed in town
Westfair Online reported on October 1 that demolition had started downtown to clear the way for Center Commons. The project is a five-story, 50-unit apartment building with two ground-floor retail spaces, developed by Dr. Lee Forest through Stratford-based 15 Unquowa Road LLC. So far only 39 Unquowa Road has come down. The neighboring buildings that housed Las Vetas lounge, Fairfield Barber Shop, Tenth of June and Nancy Galasso Interiors are marked for demolition and were still standing at last report.
Three tenants have already moved, and each one stayed in Fairfield:
| Business before | Old location | Business now | New address |
|---|---|---|---|
| Catch a Healthy Habit | 39 Unquowa Road | Clean Slate | 116 Sherman Street |
| Las Vetas | Unquowa Road block | Las Vetas | 1640 Post Road |
| Fairfield Barber Shop | Unquowa Road block | Fairfield Hair House | 1040 Post Road |
The café's move is the one people are most likely to have noticed. The Town of Fairfield announced that Clean Slate, formerly Catch a Healthy Habit, received a grant from the town's Micro-Enterprise Assistance Program. The money went toward new equipment and the cost of fitting out the Sherman Street space. The menu still centers on organic, gluten-free food, fresh-squeezed juices, dairy-free smoothies, matcha and coffee. Owners Lisa Storch and Glen Colello still run it. Storch is the raw foods chef who beat Bobby Flay on the Food Network in 2020. In the town's announcement, Storch said, "We look forward to continuing to serve the greater Fairfield community for many years to come." The program is funded through the U.S. Department of Housing and Urban Development, and the town says it has helped more than sixty small businesses since it began.
Meanwhile, the Post Road filled up with brands from other towns
The new arrivals came from every direction, and each had already proven itself in another town before signing a Fairfield lease. In order of opening:
- Via Posa, 2126 Post Road, opened August 3. The Connecticut Post reported that the team behind Posa Ristorante and Vineria in Ridgefield opened it as a casual Italian café. The menu includes house-made cornettos, bomboloni, pizza, pasta and paninis, along with dishes like gnocchi alla sorrentina and arancini cacio e pepe.
- Flat Out Burger, 58 Post Road, opened August 15. This New York-based smash-burger takeout spot sits on the corner of Grasmere Avenue in a space that used to be a hair salon. Patch reported that the brand first reached Connecticut through the Hartford HealthCare Amphitheater in Bridgeport, and Fairfield is its first stand-alone location in the state. First Selectwoman Christine Vitale cut the ribbon.
- Kneads, 1916 Post Road, opened the week of October 14. The bakery and café makes its breads and pastries from scratch, using organic whole grains stone-milled from regional producers. Patch reported that owners Daniel and Brittany Moreno opened their Westport location in September 2020 and plan to open in Greenwich next year.
None of the three is testing an untried concept. Kneads had six years in Westport behind it. Via Posa is a casual offshoot of a Ridgefield fine-dining kitchen. Flat Out Burger had been serving crowds at a Bridgeport concert venue before it ever had its own storefront in Connecticut.
Kouzina explains why Fairfield is on the list
The clearest answer to why established brands keep choosing Fairfield comes from the next opening on the calendar. CT Insider reported on October 12 that Kouzina Greek Taverna and Bar plans a second location at 52 Sanford Street. General Manager Chelsea Pazmino told the outlet the restaurant is expected to open the first week of November. According to Pazmino, the move came from two-hour weekend waits at the Stamford restaurant.
"They wanted to do a bunch of Kouzinas, and they thought that Fairfield would be the perfect option, so they had been looking for a while and they finally found a place that they can do it over there," Pazmino told CT Insider.
The Fairfield location will serve the same menu as Stamford, with chef Peter Alatsas from the Stamford kitchen in charge. Pazmino named the moussaka, the gyros and the lamb shanks as the most popular dishes. The lamb is braised for 12 hours and was the dish featured when the restaurant appeared on "Diners, Drive-Ins and Dives" in 2023. The same ownership group also runs The Americano and Tomato Tomato in Stamford.
The Sanford Street address tells its own story. It was last home to Tablao Wine Bar & Restaurant, which opened in December 2023 and closed in 2025. A downtown dining room that had been empty is about to reopen under a name that already has a following thirty minutes down I-95. As of this writing, the early-November date comes from the restaurant's general manager, so it is the target the restaurant has given, not a confirmed opening day.
The fall also brought a closing
The arrivals and relocations came alongside one notable loss. Patch reported in mid-September that Trevi Lounge, an LGBTQ+ bar at 548 Kings Highway Cutoff, had closed after 17 years. The bar helped launch Fairfield Pride events and was known for its karaoke nights and live music. Unlike the Unquowa Road tenants, Trevi Lounge did not announce a new location.
What the next year looks like downtown
Center Commons will keep changing the Unquowa Road streetscape for a while. Westfair reported that construction is planned for late 2026 into early 2027. The developer expects building the structure and finishing the interiors to take 12 to 18 months from the day the foundation is poured. That puts any new ground-floor shops well past next summer. The project's two street-level retail spaces came out of an agreement between the developer and the Town and its Plan and Zoning Commission, reached after the commission first denied the application and the developer sued.
The same thing is happening on the east side of town. Westfair reported that the former Rio Bravo Tacos & Tequila at 770 Commerce Drive was demolished along with a WWII-era industrial building next door at 750 Commerce Drive. The site, about a tenth of a mile from the Fairfield Metro/Black Rock train station, is planned for a 90-unit mixed-use building with 4,313 square feet of first-floor retail. Skala Partners of West Hartford is building it, with construction scheduled to start in late 2026 and wrap up in 2027.
So two former restaurant sites in different corners of town now hold plans for apartments over retail. The restaurants filling Fairfield's open storefronts in the meantime are mostly brands that already proved themselves somewhere else.
A quick reference for the next few weeks:
- New this fall: Via Posa at 2126 Post Road, Flat Out Burger at 58 Post Road, Kneads at 1916 Post Road
- Expected in early November: Kouzina at 52 Sanford Street
- Same people, new address: Clean Slate at 116 Sherman Street, Las Vetas at 1640 Post Road, Fairfield Hair House at 1040 Post Road
- Closed: Trevi Lounge at 548 Kings Highway Cutoff
Downtown storefronts are turning over fast, and the businesses moving in or out of a block affect what it's like to live near it.
